Phillips Crab Ceviche
INGREDIENTS:
8 oz. Phillips Claw Crab Meat
8 oz. Phillips Special Crab Meat
1 1/2 cups of fresh chopped cilantro
1/2 white onion, chopped
2 tomatoes, diced
1 seedless cucumber, diced
3 limes
3 finely chopped Serrano peppers (optional)
1 Tbs. of ketchup
1/2 cup of Clamato, Kermato or V8 juice
PREPARATION:
1. In a large bowl, blend the crab meat without breaking it up excessively
2. Add the juice of two limes, onion, cilantro, tomatoes, cucumber and Serrano peppers. Add salt.
3. Combine the ketchup, clamato and the juice of the third lime. Add more salt if necessary.
4. Serve with tostadas or crackers.
YIELDS: 4-6 SERVINGS

Thai Crab Claw Meat Salad
INGREDIENTS:
8 oz. Phillips Claw Crab Meat
8 oz. Phillips Special Crab Meat
1 1/2 cups of fresh chopped cilantro
1/2 white onion, chopped
2 tomatoes, diced
1 seedless cucumber, diced
3 limes
3 finely chopped Serrano peppers (optional)
1 Tbs. of ketchup
1/2 cup of Clamato, Kermato or V8 juice
PREPARATION:
1. Combine iceberg lettuce, red leaf lettuce, romaine lettuce, and mesclun mix and place the mixture on a plate
2. Combine lime juice, fish sauce, Serrano pepper, cilantro, red pepper, chopped garlic, and sugar in a bowl and mix until sugar dissolves.
3. Add claw meat into the mix and drain. Place over green salad and garnish with carrots.
YIELDS: 4 SERVINGS

Healthy Crab Scampi
INGREDIENTS:
1 lb. Phillips Crab Meat
salt & pepper to taste
1 lb. pasta or 4 cups rice, cooked
2 Tbsp. olive oil
2 Tbsp. margarine, soft tub
2 Tbsp. garlic, chopped
2/3 cup white wine
4 tsp. Worcestershire sauce
2 Tbsp. fresh lemon juice
1/4 tsp. red pepper, dried
1/4 cup clam juice, canned or bottled
2 tsp. fresh parsley, chopped
PREPARATION:
1. Heat oil and margarine in large skillet over medium heat. Add garlic and cook until garlic lightly browns.
2. Add wine, Worcestershire sauce, lemon juice, red pepper, clam juice. Bring to boil and cook for 4 minutes or until slightly reduced.
3. Gently stir in crab meat and parsley. Add salt and pepper to taste.
4. Serve over cooked pasta or rice.
