Salads: Baby Limas with Tomato and Basil
3 tablespoons olive oil
3 tablespoons lemon juice
Grated rind of 1 lemon, about 2 teaspoons
1 clove garlic, minced or pressed
3/4 teaspoon salt
1/4 teaspoon pepper
5 cups cooked* baby lima beans, drained, not cooled
1 cup chopped tomatoes (2 medium)
1/3 cup diced red onion
1/4 cup chopped fresh basil
*1-3/4 cups dry makes 5 cups cooked.
In a large bowl, combine olive oil, lemon juice, lemon rind, garlic, salt and pepper. Add hot, drained beans; cool 10-15 minutes, stirring frequently. Add tomatoes, onion and basil. Marinate 1-2 hours at room temperature before serving. Makes: 6 cups. Serves 4-6.
