Salad Recipes: Blackeyes and Corn Salad

Blackeyes and Corn Salad

3          cups cooked* or 2 cans (15 oz. each) blackeyes, drained
1          can (15 oz.) corn, drained
3/4       cup chopped tomato (1 medium)
1/3       cup finely chopped red onion
1/4       cup minced cilantro
Lime Chili Dressing (recipe follows)

Lime Chili Dressing
4          tablespoons lime juice
3          tablespoons olive oil
1          clove garlic, minced or pressed
1          teaspoon chili powder
1/2       teaspoon grated lime rind
1/4       teaspoon each sugar, salt and pepper

*1 cup dry makes 3 cups cooked.

In a large bowl, combine blackeyes, corn, tomato, onion and cilantro. Gently stir in Lime Chili Dressing. Refrigerate until serving.

Lime Chili Dressing
In a small bowl or shaker jar, combine all ingredients and mix well. Makes about 1/2 cup. Makes: 6 cups. Serves 6
