Chef Erin's recipe: Steak a'la Mexicana
INgredients
8 Ounce Flank Steak, sliced thin
1 Garlic Clove, sliced thin
1 Small Can V8 Juice
1/4 Cup Diced Tomato
1/3 Yellow Onion, sliced thin
1/2 Jalapeno or Serrano, seeded and diced small
1/4 tsp Oregano
1/4 tsp Thyme
Salt and Pepper to Taste
1 tsp Olive Oil
Direction
Heat oil in sauté pan on medium high heat.
Carefully place flank steak in pan and cook until all sides are seared.
Reduce heat to medium.
Add onion, garlic, and jalapeno to the pan and cook until onions are slightly tender.
Add tomatoes, oregano, and thyme; stir in well.
Add V8 juice slowly while stirring and reduce heat to low.
Sprinkle with salt and pepper.
Cover and let simmer about 15 minutes.
Serve over brown rice.
Tip: Mix with scrambled eggs and wrap in a tortilla for a great breakfast burrito
