Healthy Recipes: Healthy Turkey and Wild Rice Casserole

Thanksgiving is over, and before you know it, it will be Christmas Eve.  Most of us would like to get rid of our turkey leftovers before it’s time to start thinking of Christmas dinner.  The following is a healthy, comforting dish that will put your turkey to good use.  No one will be able to tell that you’re serving leftovers.  This is mild; just the thing for overtaxed digestive systems. 

Healthy Turkey and Wild Rice

3 cups chicken

1 box of Uncle Ben’s Long Grain and Wild Rice

1 can chicken broth

1 can Cream of Celery Soup

1 med. jar of pimento

1 medium onion, chopped

1 can French style green beans

1 cup Real Mayonnaise

1 can diced water chestnuts

1 cup grated cheddar cheese. 

Saute’ onion in 1 TBS. olive oil.  While onions are browning, prepare box of Uncle Ben’s rice according to package directions, using chicken broth instead of water.  Combine all ingredients in a casserole dish and bake 25-30 minutes at 350 degrees.
