Editor's note: Olive oil is rich in monounsaturated fatty acids, which are more thermally stable than polyunsaturated fatty acids, which when heated can be transformed into trans fat. Those who read foodconsumer.org often should have known that trans fat is linked to 100,000 deaths from heart disease each year in the United States, according to Harvard scientists. Trans fat can also increase risk for type 2 diabetes mellitus. However frying, which occurs often at 180 oC, can generate lots of nasty chemicals such as aldehydes, which are chemically reactive and they react with other molecules leading to mutations and boosting cancer risk among other things.
