Mock Mashed Potatoes


2 Cups Cauliflower
1 Cup 1% Milk
1 Tbsp Butter
1 Garlic Clove, sliced
1 Cube Chicken Bouillon
2 Tbsp Parmesan or Romano Cheese
Seasoning Salt and White Pepper to taste


Combine all ingredients, except cheese, in a saucepan over medium heat.
Bring milk to a simmer, turn heat down to medium low, cover, and let simmer until cauliflower is very tender.
Remove from heat and carefully place in blender, adding the cheese.
Blend until creamy.
If desired, top with chopped fresh chives.

Tip: By doubling the milk in this recipe you can turn it into a creamy cauliflower soup that tastes great.
