Chef Erin's recipe: Southwest Black Bean Salad
Southwest Black Bean Salad
1 can black beans
1/2 red bell pepper, chopped small
1/2 yellow bell pepper, chopped small
1/2 jalapeno, minced (use the whole pepper if you like it spicy)
1/2 cup cooked corn
1 cup spinach, roughly chopped
1/3 red onion, chopped small
1/2 bunch fresh cilantro, chopped
1/2 tsp cumin
1/2 tsp chile powder
Dash or two of cayenne powder
Dash of salt
1/4 tsp black pepper
1 tbsp lemon or lime juice
Dash of Tabasco or other brand hot sauce
2 tbsp olive oil
Mix all dressing ingredients together well, set aside.
Combine salad ingedients together and toss gently.
Drizzle dressing over salad and toss well.
Tip: To turn this delicious salad into a quick complete meal, toss in a can of tuna.
