Black pepper used in the salami being recalled by Daniele Inc is the source of the multi-state salmonella outbreak, Food Safety News reports.
Rhode Island public health officials found the black pepper supplied by New York's Wholesome Spice to Daniele Inc. contained the Salmonella Montevideo outbreak strain which sickened at least 189 people in 40 states.
The ongoing investigation into the multi-state salmonella outbreak led to the revelation that Daniele' salami/salame products were contaminated with salmonella, prompting the company to voluntarily recall 1.24 million pounds of its read-to-eat meat products.
Daniele was cited by Food Safety News as saying it now plans to use irradiated pepper in its products from another spice supplier.
Irradiation, a process based on high doses of radiation, is employed to kill deadly bacteria, but consumers are concerned about the safety of this process.
