Believe it or not St. Patrick's day is tomorrow March 17.

Besides coloring everything green, what can you do for fun? Cook a traditional delicious dish corned beef in a slow cooker to celebrate the day!

The following corned beef recipe is based on a corned beef recipe from about.com, which is good. However, we simplified something to make the cooking even easier.

What you need to cook this corned beef recipe include a slow cooker, corned beef, cabbage, celery, potatoes and carrots, which are typically used in a corned beef recipe.

**Ingredients:**

6 to 8 potatoes, thick sliced;

3 carrots, thinly sliced;

2 ribs celery, thinly sliced;

3 pounds of corned beef brisket;

1 medium sized cabbage; cut into 8 wedges;

1/2 teaspoon black pepper;

1 1/2 cups tap water

1/2 teaspoon salt (add more if you want)

**Instruction:**

Lightly butter or spray a big enough slow cooker or crock pot;

Lay potato and carrot slices over the bottom of the cooker;

Add corned beef on vegetables;

Arrange cabbage around meat;

Sprinkle with black pepper and add water;

Cover and cook with low heat for 7 to 8 hours or until meat and vegetables become tender.

After the cooking is done, add some salt to it. (Don't add salt before the cooking is finished.) Then move meat to a platter, cover with foil and rest for 10 minutes before sliced and served.

This corned beef and cabbage recipe offers 8 servings. Make sure to use a slow cooker. Need to be very patient. To speed up the cooking, use medium heat to raise temperature to boiling point and hold it for 20 minutes and then use low heat to finish the cooking.
