- Description: A Dutch study followed 62,573 women aged 55 to 69 for 11.3 years and found non-smokers with the highest acrylamide intake were 29 percent likelier to develop endometrial cancer and 78 percent likelier to develop ovarian cancer. It is observational and proves no cause.

Saturday Aug 13, 2016 (foodconsumer.org) -- Eating too much of a food containing high levels of acrylamide may increase risk for postmenopausal endometrial cancer and ovarian cancer, according to a study released in Cancer Epidemiology, Biomarkers & Prevention.

For the study, which was conducted by researchers at Maastricht University in Maastricht, the Netherlands, 62,573 women aged 55 to 69 years were followed for 11.3 years during which 1,835 cases of endometrial, ovarian and breast cancer were identified.

During the follow-up, non-smokers who had the highest intake of acrylamide were 29% and 78% more likely to be diagnosed with endometrial cancer and ovarian cancer respectively, compared to those non-smokers who had lowest amounts of this carcinogen. However, intake of acrylamide was not associated with risk for breast cancer among non-smokers.

Among smokers, those who had highest intake of acrylamide were 99%, 122% and 10% more likely than those with lowest intake to develop endometrial, ovarian and breast cancer, respectively.

Starch foods like fries contain high levels of acrylamide. Acrylamide is a cancer causing agent and high intake of this fried food may increase risk of cancer, according to this current study.

The study is not a trial. It does not prove that eating foods with acrylamide definitely or actually increases risk for any cancer. However, it is quite possible that high intake of acrylamide boosts such a risk because this chemical is a known carcinogen. (David Liu)
