Here is Ina Garten's roast turkey recipe:

Ingredients:

1 12-pound turkey (don't have to be exact)
Kosher salt (depending up your taste buds)
Freshly ground black pepper (to have the best flavor)
1 bunch of fresh thyme
1 lemon, halved
3 Spanish onions
1 head garlic, halved crosswise
4 tablespoons of butter, melted
1/2 cup of olive oil
8 peeled carrots in 2-inch chunks
10 red potatoes, halved

3 heads fennel with fronds removed and cut into wedges through the core

Instruction

Preheat the oven to 350 oF.

Take giblets out of the turkey and wash it, remove excess fat and pat the outside dry.

Place the turkey in a roasting pan, salt and pepper the inside of the turkey cavity, and then stuff the cavity with thyme, lemon, one onion and garlic. Tie legs with string.

Coat the outside of the turkey with butter and sprinkle pepper and salt as wanted.

Tuck wing tips under the turkey body, toss peeled and sliced onion with 1/4 cup of olive oil and scatter them around the turkey. Place the turkey in the roasting pan.

Roast the turkey at 350 oF for 1 hour. Then toss carrots, potatoes and fennel again with 1/4 cup of olive oil and add to the roast pan, and keep the roasting pan in the oven for another half a hour. Remove the turkey to a cutting board and cover it with aluminum foil and let it sit for 20 minutes.

While the turkey rests, stir the vegetables and take the pan back to the oven and continue cooking the vegetables.

Slice the turkey and serve on a plate with the cooked veggies.

Ina Garten also offers a stuffing recipe.
