Centers for Disease Control and Prevention (CDC) stands by the statement, "Eggs are one of nature's most nutritious and economical foods."

However, with the recent outbreak of salmonella enteritidis being linked to eggs, the Food and Drug Administration (FDA) issued a recall of eggs produced on the farm of Wright County Egg (WCE) of Galt, Iowa.

WCE is voluntarily recalling specific Julian dates of shell eggs produced by their farms because they have the potential to be contaminated with Salmonella which is an organism which can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems.

Healthy persons infected with Salmonella often experience fever, diarrhea, nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections, endocarditis or arthritis.

The CED explains, "A bacterium, Salmonella Enteritidis, can be on both the outside and inside of eggs that appear to be normal, and if the eggs are eaten raw or undercooked, the bacterium can cause illness."

Confirmed cases of salmonella enteritidis are reportedly related to the shell eggs. FDA investigations are ongoing.

Packaged under the following brand names: Lucerne, Albertson, Mountain Dairy, Ralph’s, Boomsma’s, Sunshine, Hillandale, Trafficanda, Farm Fresh, Shoreland, Lund, Dutch Farms and Kemps. Eggs are packed in varying sizes of cartons (6-egg cartons, dozen egg cartons, 18-egg cartons) with Julian dates ranging from 136 to 225 and plant numbers 1026, 1413 and 1946\. Dates and codes can be found stamped on the end of the egg carton. The plant number begins with the letter P and then the number. The Julian date follows the plant number, for example: P-1946 223.

Recalled eggs were distributed throughout California, Colorado, Illinois, Iowa, Minnesota, Missouri and Wisconsin to distribution centers, food wholesalers and food service companies, some of which distribute nationwide.

In a statement, spokesperson for WCE said, "Wright County Egg is fully cooperating with FDA’s investigation by undertaking this voluntary recall. Our primary concern is keeping Salmonella out of the food supply and away from consumers. As a precautionary measure, WCE also has decided to divert its existing inventory of shell eggs to a breaker, where they will be pasteurized to kill any Salmonella bacteria present."

"Consumers who believe they may have purchased these shell eggs should not eat them but should return them to the store where they were purchased for a full refund."

Additionally, "Our farm strives to provide our customers with safe, high-quality eggs – that is our responsibility and our commitment."

To lower the risk of salmonella enteritidis infections from eggs, the CDC states "Cooking reduces the number of bacteria present in an egg; however, an egg with a runny yolk still poses a greater risk than a completely cooked egg. Undercooked egg whites and yolks have been associated with outbreaks of Salmonella Enteritidis infections. Both should be consumed promptly and not be kept warm or at room temperature for more than 2 hours."

Specific ways to reduce risk of salmonella enteritidis infection:

1.Keep eggs refrigerated at 45 degrees at all times.
2\. Discard cracked or dirty eggs.
3\. Wash hands, cooking utensils, and food preparation surfaces with soap and water after contact with raw eggs.
4\. Eggs should be cooked until both the white and the yolk are firm and eaten promptly after cooking.
5\. Do not keep eggs warm or at room temperature for more than 2 hours.
6\. Refrigerate unused or leftover egg-containing foods promptly.
 7\. Avoid eating raw eggs.
8\. Avoid restaurant dishes made with raw or undercooked, unpasteurized eggs. Restaurants should use pasteurized eggs in any recipe (such as Hollandaise sauce or Caesar salad dressing) that calls for raw eggs.
9\. Consumption of raw or undercooked eggs should be avoided, especially by young children, elderly persons, and persons with weakened immune systems or debilitating illness.

Most significantly at risk for severe illness from salmonella are the elderly, infants, and those with impaired immune systems. The infection may spread from the intestines to the blood stream, and then to other body sites and can cause death unless the person is treated promptly with antibiotics.

Salmonella enteritidis infection usually presents with fever, abdominal cramps, and diarrhea beginning 12 to 72 hours after consuming a contaminated food or beverage. Usually lasting 4-7 days, and most persons recover without antibiotic treatment. However, the diarrhea can be severe, and the person may be ill enough to require hospitalization.

WebMD cites 'dehydration, caused by diarrhea as the most common complication in an otherwise healthy person and suggests frequent sips of a rehydration drink (such as Lytren, Pedialyte, or Rehydralyte). A good rule of thumb is to try to drink a cup of water or rehydration drink for each large, loose stool you have. You can also use a sports drink, such as Gatorade, but soda and fruit juices have too much sugar and not enough of the important electrolytes that are lost during diarrhea, and should not be used to rehydrate.'

Doctors believe that eating a normal diet will also help you feel better faster by getting enough nutrition, but warn to avoid foods that are high in fat and sugar. Also recommended is to avoid spicy foods, alcohol, and coffee for two days after all symptoms have disappeared.
