The United States Department of Argriculture offers some tips on safe minimum cooking temperatures that need to be used to cook various meat and seafood. The mininum cooking temperatures are needed to destroy the potential risk factors like pathogenic bacteria.
It should be kept in mind that the color of the food does not always accutaretly indicate whether the food is well-done.
Also what should be remmebered is that after you remove meat from a grill, oven or other cookware, allow it to rest for the specific time. In order to destroy specific pathogens, both specifc temperatures and the rest time need to be used.
