Outbreaks of foodborne illness have been traced to untreated juice and cider. The advice is to read the label to confirm the juice was pasteurized or treated, and to ask when it is unclear, especially in refrigerated cases, at cider mills and farm markets, or when sold by the glass.

HHS says All Infant Formulas Contain Fluoride; Avoid Mixing with Fluoridated Water (PR)
HHS Assistant Secretary for Health Howard Koh said in a Medscape video that all infant formulas already contain some fluoride and that routinely mixing them with fluoridated water raises the risk of dental fluorosis. CDC data put fluorosis in more than 41% of adolescents.

Tips for Fresh Produce Safety
Produce tips from foodsafety.gov: bag fruits and vegetables apart from raw meat, refrigerate cut or peeled produce at 40 degrees or below, wash hands for 20 seconds, rinse produce under running water just before use, and skip soap and commercial produce washes.

Storage Times for the Refrigerator and Freezer
USDA's storage chart: opened hot dogs keep a week, bacon 7 days, raw ground meat 1 to 2 days, steaks 3 to 5 days, and cooked leftovers 3 to 4 days in the refrigerator at 40°F or below. Freezer times are for quality only; frozen food stays safe indefinitely.
Biological
Ground Beef and Food Safety
USDA hotline answers on ground beef: beef fat may be added to hamburger but not to ground beef, both cap fat at 30 percent and allow no water, extenders or binders, all meat sold across state lines must be federally inspected, and grading is voluntary.

Do the Chemicals That Turn Soda Brown Also Cause Cancer?
CSPI says the caramel coloring in Coke, Pepsi and other sodas yields 2-methylimidazole and 4-methylimidazole, which caused lung, liver and thyroid cancer in lab rodents. California regulators set a significant-risk level at 16 micrograms a day; a 12-ounce can holds about 130. The FDA disagrees.

Drinking colas boost cancer risk?
CSPI's Michael Jacobson says the caramel colourings made by reacting sugars with ammonia or sulfites carry 2- and 4-methylimidazole, which animal studies link to lung, liver and thyroid tumours. The group has petitioned the FDA to ban them; UC Davis found 0.30 to 0.36 ug/ml in colas.

Safe Water - Newsletter from EWG
An EWG appeal urging readers to ask their senators to co-sponsor the Boxer-Feinstein bill, which would make the EPA set a safe drinking-water limit for chromium-6 within a year. EWG's December report detected the suspected carcinogen in 31 of 35 city water supplies tested.

Danger Of Bone Cancer From Fluoride In Toothpaste, Drinking Water (PR)
An action alert from Samuel Epstein's Cancer Prevention Coalition claims fluoride in toothpaste and drinking water is a major avoidable cause of bone cancer, pointing to a 20 percent rise in incidence among children under 15 over three decades.
GMO
This Could Threaten the Future of Food – Destroying the Entire Food Chain…
Dr. Mercola cites the Institute for Responsible Technology and plant pathologist Don Huber, who says glyphosate does not kill plants directly but weakens their defenses and activates soil pathogens; Huber reports more than 40 crop diseases increasing with its use.

Botulism: The basics
A foodsafety.gov factsheet on botulism: sources include honey and home-canned goods for infants, and improperly canned or warm-held foods for others. Incubation runs 3 to 30 days in infants and 12 to 72 hours otherwise. It is a medical emergency; call a doctor at once.

Listeria Has Acquired Ability to Attack the Heart
A brief note that Listeria monocytogenes, found in raw milk, soft-ripened cheeses and ready-to-eat cold cuts and able to thrive under refrigeration, has strains that researchers say appear to have gained an enhanced ability to invade and infect the heart.

Heroic New York City Legislator Introduces Bill to Stop Fluoridation (PR)
NYC Council Member Peter Vallone Jr. introduced Int 0463-2011 to prohibit adding fluoride to the city's water, and five colleagues signed on as co-sponsors. NYSCOF cites CDC figures that over 41 percent of adolescents have dental fluorosis, 4 percent of it severe.

The Toxin So Dangerous - Even CDC Now Warns Against Consumption by Infants
One study found the fluorapatite shield fluoride forms on teeth is only about 6 nanometers thick, leading scientists to question how it protects. Another reports lower IQ scores among children in a high-fluoride area. Mercola calls fluoride a neurotoxin.

Dr. Pollack on Structured Water
University of Washington bioengineering professor Gerald Pollack tells Dr. Mercola that water is central to cell biology, noting muscle tissue consists of 99 percent water molecules, and argues textbooks largely ignore water's role in how cells work.

Genetically modified chickens could stop bird flu epidemic
Cambridge and Edinburgh researchers report in Science that chickens engineered to make a decoy molecule mimicking part of the flu genome still became sick when infected with avian flu but did not pass the virus to other birds. The chickens are meant for research, not for eating.

Caffeine can't curb effects of alcohol
Adding caffeine to alcohol did not improve reaction time or driving-test performance among 129 people aged 21 to 30, a study in Addiction found. The authors see little or no protective benefit and call for scrutiny of how caffeinated alcoholic drinks are advertised.

Salmonella: the basics
A factsheet on salmonella, the most common cause of U.S. food poisoning: sources include contaminated eggs, poultry, unpasteurised milk, raw produce, reptiles and birds. Symptoms start in one to three days and last four to seven; fluids and rest usually suffice.
